Ingredients:

4 red potatoes
1 tablespoon olive oil
1 onion, chopped
1 green bell pepper, seeded and chopped
2 tablespoons olive oil
1 teaspoon salt
3/4 teaspoon paprika
1/4 teaspoon ground black pepper
1/4 cup chopped fresh parsley

Directions:

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool cut into 1/2 inch cubes.
In a large skillet, heat 1 tablespoon olive oil over medium high heat. Add onion and green pepper. Cook, stirring often, until soft; about 5 minutes. Transfer to a plate and set aside.
Pour remaining 2 tablespoons of oil into the skillet and turn heat to medium-high. Add potato cubes, salt, paprika and black pepper. Cook, stirring occasionally, until potatoes are browned; about 10 minutes. Stir in the onions, green peppers and parsley and cook for another minute. Serve hot.

1 kg potatoes
1 onion
100g smoked or boiled sausage
Dill or parsley
20g vegetable oil
Salt
Grounded black pepper

Preparation:
Peel and slice potatoes.
Heat a pan and pour oil on it.
Put potatoes on the heated pan and fry on a big flame, stirring every 2 min for 10-15 min.
When potatoes gain crust, reduce the flame and cover the pan with a lid.
Chop onion and sausage.
Put the onion and sausage on the potatoes and cover with a lid.
Fry for 15 min, stirring every 3-4 min.
When the dish is ready sprinkle it with chopped dill or parsley and add salt.

Time for cooking: 30 min

Ingredients:
1/4 cup extra-virgin olive oil
1 1/2 lb Yukon Gold potatoes (about 5), peeled and halved lengthwise, then cut crosswise into 1/4-inch-thick slices
1 large onion, halved lengthwise, then sliced lengthwise (1/4 inch thick)
3/4 teaspoon dried oregano, crumbled
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons finely grated Parmigiano-Reggiano

Preparation:
Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then add potatoes, onion, oregano, salt, and pepper and reduce heat to moderate. Cook, covered, stirring and turning potatoes over occasionally, until almost tender, about 10 minutes. Remove lid and cook, stirring and turning potatoes over 3 or 4 times, until browned and crusty, 8 to 10 minutes more. Add salt and pepper to taste, then transfer to a shallow bowl and sprinkle with cheese.

Ingredients (serves 4)

* 1kg Coliban or Sebago potatoes
* 2 tablespoons olive oil

Method

1.

Preheat oven to 200°C. Peel potatoes and cut into 5cm chunks. Place into a large saucepan. Cover with cold water.
2.

Bring to the boil over medium-high heat. Reduce heat to medium. Simmer for 15 minutes or until partially cooked (potatoes should be only just tender when pierced with a skewer).

Drain potatoes well. Return to saucepan over low heat until any remaining water evaporates. Shake saucepan vigorously to rough up surface of potatoes (this will make them crunchy when roasted). Alternatively, scrape surfaces of potatoes with a fork to create a rough texture.
4.

Pour oil into a large roasting pan. Place roasting pan into oven for 5 minutes or until oil is hot. Working quickly, add potatoes to hot oil. Use tongs to turn potatoes to coat in oil, then return roasting pan to oven.
5.

Roast potatoes for 40 minutes. Turn and roast for a further 30 minutes or until golden and crisp. Season with salt. Serve immediately.
